At the request of the Wonderful Writer from #WWT : Anita Rodgers
1 cup old-fashioned oats (don't use quick oats)
1/2 cup stevia (not a fan of this stuff and would rather put coconut sugar in it but it raises the calorie count)
2 scoops chocolate protein powder
1 tbsp. fat free cheesecake pudding mix
1 tbsp. unsweetened Hershey's cocoa powder
1 tsps. baking powder
1 tsps. baking soda
1 cup liquid egg whites
1/2 cup nonfat plain Greek yogurt
Preheat the oven to 350 F.
Coat 12 cups of a muffin pan with cooking spray (fat free butter)
Use blender to grind the oats down to flour.
Mix together until smooth.
Divide evenly into the twelve muffin cups.
Bake for 15-20 minutes and a wooden toothpick inserted comes out clean.
Freeze or eat while warm.
Not recommended for children. 2 muffins is one good serving of protein!
